When PAVIA opened its doors, we wanted our sweets to be special. With this in mind we decided that we would bake everything on site. Five years later, we now have a full commercial bakery, three wonderful bakers, and an authentic Italian Nonna that drops in to lend a hand from time to time. In his 2011 year in review, Bill Spurr from the Halifax Chronicle Herald awarded us with Runner-Up for Nova Scotia’s Best Dessert. Needless to say, we take a lot of pride in our sweets. We bake everything fresh. This means that everything is wonderful but occasionally, we may run out.
We use very high quality and carefully sourced ingredients. We do not believe in using battery farmed eggs, margarines, or food colouring. In addition we use Callebaut chocolate which comes from 100% sustainably farmed cocoa beans. Our high standards result in a marginally higher-priced product, which we hope you agree is worth it.
Daily, we serve delectable Italian lemon-almond squares, melt-in-your-mouth authentic Italian Ricciarelli cookies, a daily flavour of fresh baked muffins, an assortment of cookies (chocolate chip, ginger, granola, biscotti), and more. On special occasions we also offer our signature Pavia Biscuit that is a delicious shortbread with a butter cream and raspberry jam filling, that is stamped with the ‘Giglio di Firenze’.
Our team also bakes cupcakes fresh every morning. A handmade vanilla or chocolate cake is decorated with a spectacular not-too-sweet buttercream icing. We generally do small batches to ensure freshness, but we also welcome special orders. To order a batch of fresh-made treats for home, work, or your event, please let us know. We are happy to accommodate.
